What a great Knight!

Kristen and I had a very good weekend.  We went to see the My Body exhibit at the Orlando Science Center.  "Very interesting" is the best way to describe it.  I am glad we went.  I think I expected more but from what was there and we saw, it was something I am glad we went to go and see.
 
We also had some friends over to watch UCF/ Southern Miss on ESPN!  That was great-  I made a BBQ Chicken Cordon Bleu -  I butterflied a chicken breast and seasoned it in the morning and then grilled it and put some tasty sauce on top and then once it was cooked I stuffed it with ham and Swiss cheese in the middle of it and then closed her up added some more sauce.  It came out really good.  I served them sandwich style.  Everyone brought some great sides of Pasta salads and a potatoes dish that tasted like a stuff baked potato casserole-  All was delicious and I got to have it all ready for me to sit and actually enjoy the TV game.
 
Enough about the food-  the Knights won on ESPN- 34-17.  We had never beaten the Eagles and it was at THE ROCK.  It looked like we were not going to win after the 1st few drives and Southern Miss just getting 5 yds a carry.  But we settled down and played like we did vs. Tulsa.  With a steady diet of Mr.... 24K. and some amazing 1 handed catches by Corey and Aikens.  I do thank that George over ran 24k though- 43 carries- come on! 
 
During that game 24K broke like 5 UCF rushing records and is on course to be on the best players UCF has ever had!  It is great to see your team do well on National television- not to mention become competitive again after the whole ECU/USF debacles.  Nice to see us on track again.  (One side note:  I love our Football staff-  but couldn't we get someone better to do the player intros.  Someone with more excitement or maybe a Brandon Marshall or someone in the NFL or famous?)
 
As my Knights were taking care of business-  My Sox were trying to wrap up the World Series!  Every time there was a stoppage of play in the game I would PIP the Sox game and swap back and forth! It was a long night but once the UCF game was over I dedicated my time to seeing the Sox hopefully clinch it.  That 2nd Out was a close one in the 9th.  You could tell Papelbon was just zoned in and I could see all the new guys that were not on the team in '04- just waiting and trying to relax and not get caught up in the fact that they were about to win a World Series and not screw this up and make this go into a game 5.
 
During the last few innings I was texting back and forth with fellow Sox fan K4 and that was my only way to get my high fives since Kristen was sleeping once the UCF game was over.
 
It is great feeling to see the Sox win-  Not as emotional as the 2004 win, but still impressive.  I was just impressed because - The Giants, UCF, and the Sox all won yesterday and I got to spend some quality time with friends and cooked and ate some delicious food.  Now that is what I say makes a good Sunday Knight!
